- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded cheddar cheese
- 4 large tortillas
- 1/4 cup chopped fresh parsley
- 1/2 cup sour cream
- 1 tbsp lemon juice
Instructions
- Heat olive oil in a pan over medium heat.
- Season chicken with salt, pepper, and paprika. Add to the pan and cook for 6-7 minutes per side.
- Add minced garlic and cook for 1 minute until fragrant.
- Remove chicken, shred it, and mix with sour cream, lemon juice, and half the cheese.
- Spoon the mixture onto tortillas, sprinkle remaining cheese and parsley.
- Roll tightly and serve warm.
