  • 1 (30 oz) bag frozen hashbrowns, thawed
  • 1/2 cup onion, finely chopped
  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1/2 cup melted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup crushed cornflakes (optional for topping)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the thawed hashbrowns, chopped onion, cream of chicken soup, sour cream, 1 cup of cheddar cheese, melted butter, garlic powder, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
  3. Transfer the mixture into a greased 9×13 inch baking dish, spreading it out evenly.
  4. Sprinkle the remaining 1 cup of cheddar cheese on top. If using, sprinkle crushed cornflakes over the cheese for added crunch.
  5. Bake in the preheated oven for 45-50 minutes or until the casserole is bubbly and the top is golden brown.
  6. Remove from the oven and let it cool for a few minutes before serving.
