- 1 (30 oz) bag frozen hashbrowns, thawed
- 1/2 cup onion, finely chopped
- 1 (10.5 oz) can cream of chicken soup
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 1/2 cup melted butter
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup crushed cornflakes (optional for topping)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the thawed hashbrowns, chopped onion, cream of chicken soup, sour cream, 1 cup of cheddar cheese, melted butter, garlic powder, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
- Transfer the mixture into a greased 9×13 inch baking dish, spreading it out evenly.
- Sprinkle the remaining 1 cup of cheddar cheese on top. If using, sprinkle crushed cornflakes over the cheese for added crunch.
- Bake in the preheated oven for 45-50 minutes or until the casserole is bubbly and the top is golden brown.
- Remove from the oven and let it cool for a few minutes before serving.
Notes
- You can prepare this casserole ahead of time and store it in the refrigerator before baking.
- Feel free to add cooked bacon or ham for extra flavor.
- For a vegetarian option, ensure the cream of chicken soup is replaced with a vegetarian version.
