  • 4 large potatoes, diced
  • 1 package smoked sausage, sliced
  • 1 cup shredded cheddar cheese
  • 1 packet ranch seasoning mix
  • 2 tablespoons olive oil
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the diced potatoes with olive oil, ranch seasoning, salt, and pepper.
  3. Spread the potatoes on a baking sheet and bake for 25 minutes, stirring halfway through.
  4. Add the sliced smoked sausage to the baking sheet and bake for another 15 minutes.
  5. Sprinkle shredded cheddar cheese over the potatoes and sausage, then bake for 5 more minutes until the cheese is melted.
  6. Remove from the oven and top with sour cream and chopped green onions before serving.
