  • 2 cups apples, peeled and diced (Granny Smith or Honeycrisp recommended)
  • 1 cup sugar
  • 1/4 cup water
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (optional)

Instructions

  1. In a medium saucepan, combine the tart cherries, diced apples, sugar, water, and lemon juice.
  2. Cook over medium heat, stirring occasionally, until the mixture comes to a boil.
  3. Reduce the heat to low and let simmer for about 15-20 minutes, or until the fruits are soft and the mixture thickens.
  4. Stir in the vanilla extract and ground cinnamon if using. Cook for an additional 2-3 minutes.
  5. Remove from heat and let cool slightly before serving. The compote can be stored in the refrigerator for up to a week.
