- 2 cups tart cherries, pitted
- 2 cups apples, peeled and diced (Granny Smith or Honeycrisp recommended)
- 1 cup sugar
- 1/4 cup water
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon (optional)
Instructions
- In a medium saucepan, combine the tart cherries, diced apples, sugar, water, and lemon juice.
- Cook over medium heat, stirring occasionally, until the mixture comes to a boil.
- Reduce the heat to low and let simmer for about 15-20 minutes, or until the fruits are soft and the mixture thickens.
- Stir in the vanilla extract and ground cinnamon if using. Cook for an additional 2-3 minutes.
- Remove from heat and let cool slightly before serving. The compote can be stored in the refrigerator for up to a week.

- Feel free to adjust the sugar to your taste, especially if your cherries are particularly tart.
