Ingredients

- 2 cups of rice
- 1 pound of chicken breast
- 4 cups of chicken broth
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon of salt
- 1 teaspoon of pepper
- 1 tablespoon of olive oil
- 1 cup of peas
- 1 carrot, diced
Instructions
- Heat olive oil in a pot over medium heat.
- Add diced onion and garlic, sauté until translucent.
- Cut chicken into bite-sized pieces and add to the pot, cook until browned.
- Add rice, stir for 2 minutes.
- Pour in chicken broth, add salt and pepper, and bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Add peas and carrots, stir, and cook for an additional 5 minutes.
- Remove from heat and let it sit covered for 5 minutes before serving.
