  • 12 oz smoked sausage, sliced

  • 1/2 cup all-purpose flour
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 bay leaf
  • Cooked rice for serving

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add flour and stir continuously to make a dark brown roux.
  3. Add onions, bell pepper, celery, and garlic. Cook until softened.
  4. Pour in chicken broth and stir until smooth.
  5. Add chicken, sausage, salt, pepper, paprika, thyme, and bay leaf.
  6. Simmer uncovered for 45 minutes, stirring occasionally.
  7. Remove bay leaf and serve hot over rice.
