Ingredients

  • 4 cups chicken broth
  • 1 lb boneless, skinless chicken breasts, diced
  • 1 cup carrots, diced
  • 1 cup bell peppers, diced
  • 1 cup green peas
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic; sauté until fragrant.
  2. Add diced chicken to the skillet and season with salt, pepper, and dried thyme. Cook until the chicken is browned and cooked through.
  3. Stir in the carrots, bell peppers, and green peas. Cook for another 5 minutes until the vegetables are tender.
  4. In a separate pot, bring chicken broth to a boil. Add the rice and stir well. Cover and reduce heat to low, cooking for about 18-20 minutes or until rice is tender and liquid is absorbed.
  5. Fluff the rice with a fork and add it to the skillet with the chicken and vegetables. Stir to combine.
  6. Serve warm, garnished with fresh parsley.
