- 2 cups white rice
- 4 cups chicken broth
- 1 lb boneless, skinless chicken breasts, diced
- 1 cup carrots, diced
- 1 cup bell peppers, diced
- 1 cup green peas
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic; sauté until fragrant.
- Add diced chicken to the skillet and season with salt, pepper, and dried thyme. Cook until the chicken is browned and cooked through.
- Stir in the carrots, bell peppers, and green peas. Cook for another 5 minutes until the vegetables are tender.
- In a separate pot, bring chicken broth to a boil. Add the rice and stir well. Cover and reduce heat to low, cooking for about 18-20 minutes or until rice is tender and liquid is absorbed.
- Fluff the rice with a fork and add it to the skillet with the chicken and vegetables. Stir to combine.
- Serve warm, garnished with fresh parsley.
