  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1 can (14 oz) coconut milk
  • 1 cup chicken broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the oil in a large pot over medium heat.
  2. Add the chopped onions and sauté until translucent.
  3. Stir in the garlic and ginger, cooking for another minute.
  4. Add the curry powder, cumin, coriander, and turmeric. Cook for 1-2 minutes until fragrant.
