- 2 lbs chicken, cut into pieces
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons curry powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1 can (14 oz) coconut milk
- 1 cup chicken broth
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the oil in a large pot over medium heat.
- Add the chopped onions and sauté until translucent.
- Stir in the garlic and ginger, cooking for another minute.
- Add the curry powder, cumin, coriander, and turmeric. Cook for 1-2 minutes until fragrant.
- Add the chicken pieces to the pot, stirring to coat them with the spice mixture.
- Pour in the coconut milk and chicken broth. Stir to combine.
- Bring to a boil, then reduce heat and let simmer for 25-30 minutes, or until the chicken is cooked through.
- Season with salt and pepper to taste.
- Garnish with fresh cilantro before serving.
