A delicious Mexican dish made with tortillas, chicken, and sauce.
Ingredients

- 2 cups cooked, shredded chicken
- 1 cup shredded cheese
- 1 can enchilada sauce
- 8 flour tortillas
- 1/2 cup sour cream
- 1/2 cup chopped onions
- 1 tablespoon olive oil
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet, heat olive oil and sauté onions until soft.
- Add shredded chicken and half of the enchilada sauce to the skillet.
- Fill each tortilla with the chicken mixture and roll them up.
- Place the rolled tortillas in a baking dish.
- Pour remaining enchilada sauce over the top.
- Sprinkle with cheese.
- Bake for 20 minutes or until cheese melts.
- Serve with sour cream.
Notes
- Use rotisserie chicken for convenience.
- Feel free to add beans or vegetables.
- Top with fresh cilantro for added flavor.
