- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 3 cups fresh spinach, chopped
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 tablespoon butter
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for 5-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the butter and garlic. Sauté for about 1 minute until fragrant.
- Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
- Stir in the heavy cream, Parmesan cheese, and Italian seasoning. Cook for an additional 3-5 minutes until the sauce thickens.
- Return the chicken to the skillet, coating it in the creamy sauce. Cook for another 2-3 minutes until heated through.
- Serve the Chicken Florentine hot, garnished with extra Parmesan cheese if desired.
Notes
- For added flavor, marinate the chicken in Italian dressing for at least 30 minutes before cooking.
