Ingredients

  • 4 large potatoes, peeled and cubed
  • 1/2 cup milk
  • 1/4 cup butter
  • 1 cup shredded cheddar cheese
  • 1 pound chicken breast, diced
  • 3 cloves garlic, minced
  • 2 tablespoons flour
  • 2 cups chicken broth
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Boil potatoes in salted water until tender, about 15 minutes.
  2. Drain potatoes and mash with milk and butter. Stir in shredded cheese.
  3. Heat olive oil in a pan over medium heat. Cook chicken until no longer pink, about 6-8 minutes. Remove and set aside.
  4. In the same pan, sauté garlic for 1 minute. Stir in flour and cook for another minute.
  5. Gradually whisk in chicken broth. Simmer until thickened, about 3-5 minutes.
  6. Return chicken to the pan and stir to coat with gravy.
  7. Serve mashed potatoes topped with chicken garlic gravy.
