- 4 large potatoes, peeled and cubed
- 1/2 cup milk
- 1/4 cup butter
- 1 cup shredded cheddar cheese
- 1 pound chicken breast, diced
- 3 cloves garlic, minced
- 2 tablespoons flour
- 2 cups chicken broth
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Boil potatoes in salted water until tender, about 15 minutes.
- Drain potatoes and mash with milk and butter. Stir in shredded cheese.
- Heat olive oil in a pan over medium heat. Cook chicken until no longer pink, about 6-8 minutes. Remove and set aside.
- In the same pan, sauté garlic for 1 minute. Stir in flour and cook for another minute.
- Gradually whisk in chicken broth. Simmer until thickened, about 3-5 minutes.
- Return chicken to the pan and stir to coat with gravy.
- Serve mashed potatoes topped with chicken garlic gravy.
Notes
- For extra creaminess, add a splash of heavy cream to the mashed potatoes.
- Use fresh garlic for the best flavor.
- Adjust salt and pepper to taste.
