- 4 boneless, skinless chicken breasts, diced

Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced chicken and cook until browned on all sides.
- Stir in minced garlic and cook for 1 minute.
- Add rice, salt, and pepper, and stir to coat the rice with oil.
- Pour in chicken broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 18-20 minutes or until rice is tender.
- Stir in grated Parmesan cheese and parsley.
- Serve hot and enjoy.
