Description
A creamy and hearty chicken gnocchi soup filled with vegetables and tender gnocchi.
Ingredients

- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 teaspoon dried thyme
- 4 cups chicken broth
- 2 cups shredded cooked chicken
- 1 cup heavy cream
- 1 package (16 oz) potato gnocchi
- 2 cups fresh spinach
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, carrots, and celery. Sauté until tender.
- Stir in thyme and cook for 1 minute.
- Add chicken broth and bring to a boil.
- Add shredded chicken and gnocchi. Cook until gnocchi float to the top.
- Stir in heavy cream and spinach. Cook until spinach wilts.
- Season with salt and pepper. Serve hot.
Notes
- Use rotisserie chicken for convenience.
- Adjust thickness by adding more or less broth.
