Ingredients

  • 2 lbs chicken breast
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt to taste
  • Pepper to taste
  • 2 cups broccoli florets
  • 1 cup quinoa
  • 4 cups water

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix olive oil, garlic powder, paprika, salt, and pepper.
  3. Coat chicken breasts with the mixture.
  4. Place chicken on a baking sheet.
  5. Add broccoli florets around the chicken.
  6. Bake for 25-30 minutes until chicken is cooked through.
  7. Meanwhile, rinse quinoa under cold water.
  8. In a pot, combine quinoa and water. Bring to a boil.
  9. Reduce heat, cover, and simmer for 15 minutes.
  10. Fluff quinoa with a fork and set aside.
  11. Once chicken is done, slice it and serve with quinoa and broccoli.

Notes

  • Store in airtight containers for up to 4 days.
  • Reheat in the microwave before serving.
