Healthy and convenient chicken meal prep for the week.


Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups broccoli florets
  • 2 cups brown rice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rub chicken breasts with olive oil, garlic powder, paprika, salt, and pepper.
  3. Place chicken on a baking sheet.
  4. Add broccoli florets around the chicken.
  5. Bake for 25-30 minutes until chicken is cooked through.
  6. Meanwhile, cook brown rice according to package instructions.
  7. Once cooked, slice the chicken and divide into meal prep containers.
  8. Add broccoli and brown rice to each container.

Notes

  • Store in the refrigerator for up to 4 days.
  • Reheat in the microwave before serving.
