Ingredients

  • 2 boneless, skinless chicken breasts, sliced
  • 8 oz mushrooms, sliced
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup sour cream
  • 1 tbsp Dijon mustard
  • 1 tbsp flour
  • 1 cup chicken broth
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken and cook until browned, about 5-6 minutes. Remove and set aside.
  3. In the same skillet, sauté onions and mushrooms until softened, about 4-5 minutes.
  4. Add garlic and cook for 1 minute.
  5. Sprinkle flour over the mixture and stir to combine.
  6. Pour in chicken broth, stirring until the sauce thickens.
  7. Reduce heat, stir in sour cream and Dijon mustard.
  8. Return chicken to the skillet and simmer for 5 minutes.
  9. Season with salt and pepper.
  10. Garnish with fresh parsley before serving.

Notes

  • Serve over egg noodles or rice.
  • For a lighter version, use Greek yogurt instead of sour cream.
  • Store leftovers in an airtight container for up to 3 days.
