A creamy and flavorful Chicken Mushroom Stroganoff that’s easy to make and perfect for a comforting meal.
Ingredients

- 2 boneless, skinless chicken breasts, sliced
- 8 oz mushrooms, sliced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup sour cream
- 1 tbsp Dijon mustard
- 1 tbsp flour
- 1 cup chicken broth
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chicken and cook until browned, about 5-6 minutes. Remove and set aside.
- In the same skillet, sauté onions and mushrooms until softened, about 4-5 minutes.
- Add garlic and cook for 1 minute.
- Sprinkle flour over the mixture and stir to combine.
- Pour in chicken broth, stirring until the sauce thickens.
- Reduce heat, stir in sour cream and Dijon mustard.
- Return chicken to the skillet and simmer for 5 minutes.
- Season with salt and pepper.
- Garnish with fresh parsley before serving.
Notes
- Serve over egg noodles or rice.
- For a lighter version, use Greek yogurt instead of sour cream.
- Store leftovers in an airtight container for up to 3 days.
