- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 medium carrots, sliced
- 2 stalks celery, sliced
- 3 cloves garlic, minced
- 8 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1/2 teaspoon black pepper
- 2 cups egg noodles
- Salt to taste
- Fresh parsley, for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Cook until the vegetables are tender, about 5 minutes.
- Add garlic and cook for another minute until fragrant.
- Pour in the chicken broth and bring to a boil.
- Stir in the shredded chicken, thyme, parsley, and black pepper. Reduce heat and let simmer for 10 minutes.
- Add egg noodles and cook until tender, about 8-10 minutes.
- Season with salt to taste.
- Serve hot, garnished with fresh parsley.
Notes
- You can use rotisserie chicken for a quicker option.
- Feel free to add more vegetables like peas or corn for extra nutrition.
- This soup freezes well; just leave out the noodles and add them when reheating.
