  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon black pepper
  • 2 cups egg noodles
  • Salt to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery. Cook until the vegetables are tender, about 5 minutes.
  2. Add garlic and cook for another minute until fragrant.
  3. Pour in the chicken broth and bring to a boil.
  4. Stir in the shredded chicken, thyme, parsley, and black pepper. Reduce heat and let simmer for 10 minutes.
  5. Add egg noodles and cook until tender, about 8-10 minutes.
  6. Season with salt to taste.
  7. Serve hot, garnished with fresh parsley.

Notes

  • You can use rotisserie chicken for a quicker option.
  • Feel free to add more vegetables like peas or corn for extra nutrition.
  • This soup freezes well; just leave out the noodles and add them when reheating.
