Description
Homemade chicken noodle soup that warms the soul.
Ingredients

- 1 whole chicken (3–4 lbs)
- 8 cups chicken broth
- 2 cups egg noodles
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 bay leaves
- Salt to taste
- Pepper to taste
- Fresh parsley, chopped
Instructions
- In a large pot, combine chicken and broth. Bring to a boil.
- Add carrots, celery, onion, garlic, and bay leaves.
- Reduce heat and simmer for 1 hour or until chicken is cooked through.
- Remove chicken, shred meat, and discard bones.
- Add egg noodles to the pot and cook until tender.
- Return shredded chicken to the pot. Season with salt and pepper.
- Garnish with fresh parsley before serving.
Notes
- Store leftovers in the fridge for up to 3 days.
- You can freeze soup for longer storage.
