- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 8 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups egg noodles
Instructions
- In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery. Cook until the vegetables are tender, about 5-7 minutes.
- Add the garlic and cook for an additional minute until fragrant.
- Pour in the chicken broth and bring to a boil.
- Add the shredded chicken, thyme, parsley, salt, and pepper. Reduce heat and simmer for 10 minutes.
- Add the egg noodles and cook until they are tender, about 7-10 minutes.
- Taste and adjust seasoning if necessary. Serve hot.
