- 2 boneless, skinless chicken breasts
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Preheat the oven to 400°F (200°C).
- Flatten the chicken breasts to an even thickness.
- Season flour with salt and pepper. Dredge chicken in flour.
- Dip chicken in beaten eggs, then coat with breadcrumbs mixed with Parmesan cheese.
- Heat olive oil in a skillet over medium heat. Fry chicken until golden brown on both sides.
- Place fried chicken in a baking dish. Top each piece with marinara sauce and mozzarella cheese.
- Bake in the oven for 15-20 minutes until cheese is melted and bubbly.
- Serve hot, garnished with fresh basil if desired.
