Instructions

  1. Pound the chicken breasts to an even thickness.
  2. Season chicken with salt and pepper.
  3. Dredge chicken in flour, shaking off excess.
  4. Heat olive oil and butter in a skillet over medium heat.
  5. Add chicken and cook until golden brown, about 5 minutes per side.
  6. Remove chicken and set aside.
  7. Add chicken broth, lemon juice, and capers to the skillet.
  8. Bring to a boil and reduce to a simmer.
  9. Return chicken to the skillet and cook for 5 more minutes.
