A delicious and easy recipe for chicken pineapple fried rice.
Ingredients

- 2 cups cooked rice
- 1 cup diced chicken breast
- 1 cup diced pineapple
- 1/2 cup peas and carrots
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 green onions, chopped
- 1 teaspoon garlic, minced
- Salt and pepper to taste
Instructions
- Heat oil in a pan over medium heat.
- Add garlic and chicken, cook until chicken is browned.
- Add peas, carrots, and pineapple, stir for 2 minutes.
- Add rice and soy sauce, mix well.
- Stir in green onions, season with salt and pepper.
- Cook for another 2-3 minutes until heated through.
Notes
- Use leftover rice for better texture.
- Adjust soy sauce to taste.
- Add more vegetables if desired.
