- 4 boneless, skinless chicken breasts
- 1 cup mushrooms, finely chopped
- 1/2 cup cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup breadcrumbs
- 2 tablespoons olive oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, add olive oil and sauté the mushrooms until they are softened, about 5 minutes.
- Add garlic and cook for an additional minute. Remove from heat and let cool slightly.
- In a bowl, combine the sautéed mushrooms, cream cheese, Parmesan cheese, parsley, Italian seasoning, salt, and pepper.
- Flatten each chicken breast between two pieces of plastic wrap using a meat mallet until about 1/2 inch thick.
- Spread a portion of the mushroom mixture onto each chicken breast, then roll them up tightly and secure with toothpicks.
- Roll each chicken roll in breadcrumbs to coat evenly.
- Place the rolls seam side down in a greased baking dish.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the rolls are golden brown.
- Remove toothpicks before serving.
Notes
- You can substitute different cheeses like mozzarella or cheddar for a unique flavor.
- Serve with a side salad or steamed vegetables for a complete meal.
- These rolls can be made ahead of time and refrigerated before baking.
