Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup mushrooms, finely chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs
  • 2 tablespoons olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil and sauté the mushrooms until they are softened, about 5 minutes.
  3. Add garlic and cook for an additional minute. Remove from heat and let cool slightly.
  4. In a bowl, combine the sautéed mushrooms, cream cheese, Parmesan cheese, parsley, Italian seasoning, salt, and pepper.
  5. Flatten each chicken breast between two pieces of plastic wrap using a meat mallet until about 1/2 inch thick.
  6. Spread a portion of the mushroom mixture onto each chicken breast, then roll them up tightly and secure with toothpicks.
  7. Roll each chicken roll in breadcrumbs to coat evenly.
  8. Place the rolls seam side down in a greased baking dish.
  9. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the rolls are golden brown.
  10. Remove toothpicks before serving.
