- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon Italian seasoning
- 2 tablespoons olive oil
- Cooking twine or toothpicks
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, combine chopped spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, minced garlic, salt, pepper, and Italian seasoning. Mix well.
- Place each chicken breast between two sheets of plastic wrap and pound until about 1/2 inch thick.
- Spread a thin layer of the spinach and cheese mixture over each chicken breast, leaving a small border around the edges.
- Starting from one end, tightly roll the chicken breast up, securing the filling inside. Use cooking twine or toothpicks to secure the ends.
- In a skillet, heat olive oil over medium-high heat. Sear each chicken roulade on all sides until golden brown, about 3-4 minutes per side.
- Transfer the seared chicken roulades to a baking dish and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Remove from the oven and let rest for 5 minutes before slicing. Serve warm.
Notes
- You can add herbs like basil or parsley to the cheese mixture for extra flavor.
- Serve with a side of roasted vegetables or a fresh salad.
