  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • Cooking twine or toothpicks

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, combine chopped spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, minced garlic, salt, pepper, and Italian seasoning. Mix well.
  3. Place each chicken breast between two sheets of plastic wrap and pound until about 1/2 inch thick.
  4. Spread a thin layer of the spinach and cheese mixture over each chicken breast, leaving a small border around the edges.
  5. Starting from one end, tightly roll the chicken breast up, securing the filling inside. Use cooking twine or toothpicks to secure the ends.
  6. In a skillet, heat olive oil over medium-high heat. Sear each chicken roulade on all sides until golden brown, about 3-4 minutes per side.
  7. Transfer the seared chicken roulades to a baking dish and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  8. Remove from the oven and let rest for 5 minutes before slicing. Serve warm.

Notes

  • You can add herbs like basil or parsley to the cheese mixture for extra flavor.
  • Serve with a side of roasted vegetables or a fresh salad.
