Ingredients

- 2 cups cooked chicken, shredded
- 1/2 cup mayonnaise
- 1/4 cup celery, diced
- 1/4 cup red onion, diced
- 1 tablespoon Dijon mustard
- Salt and pepper to taste
- 4 slices of bread
- Lettuce leaves
- Tomato slices
Instructions
- In a bowl, combine shredded chicken, mayonnaise, celery, red onion, and mustard.
- Mix until well combined. Season with salt and pepper.
- Toast the bread slices if desired.
- Spread the chicken salad mixture on two slices of bread.
- Add lettuce and tomato slices on top.
- Top with remaining bread slices. Cut in half and serve.
Notes
- Use leftover rotisserie chicken for a quicker option.
- Add grapes or nuts for extra flavor and texture.
- Store any leftover chicken salad in the refrigerator for up to 3 days.
