A delicious and easy-to-make dish featuring tender chicken scampi served over creamy garlic parmesan rice.
Ingredients

- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1 cup long-grain white rice
- 2 cups water
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a large skillet over medium heat. Cook the chicken until golden brown on both sides, about 5-6 minutes per side. Remove and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute.
- Add chicken broth and heavy cream, stirring to combine. Bring to a simmer.
- Stir in parmesan cheese until melted and sauce is creamy.
- Return the chicken to the skillet, coating it with the sauce. Simmer for 2-3 minutes.
- Meanwhile, cook the rice in a separate pot according to package instructions.
- Serve the chicken scampi over the cooked rice, garnished with fresh parsley.
Notes
- You can use chicken thighs instead of breasts for a richer flavor.
- Adjust the amount of garlic to your preference.
- For a lighter version, substitute half-and-half for heavy cream.
