Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 cup long-grain white rice
  • 2 cups water
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium heat. Cook the chicken until golden brown on both sides, about 5-6 minutes per side. Remove and set aside.
  3. In the same skillet, add minced garlic and sauté for 1 minute.
  4. Add chicken broth and heavy cream, stirring to combine. Bring to a simmer.
  5. Stir in parmesan cheese until melted and sauce is creamy.
  6. Return the chicken to the skillet, coating it with the sauce. Simmer for 2-3 minutes.
  7. Meanwhile, cook the rice in a separate pot according to package instructions.
  8. Serve the chicken scampi over the cooked rice, garnished with fresh parsley.
