- 2 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated parmesan cheese
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt, pepper, and Italian seasoning, then cook until golden brown on both sides. Remove and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute. Add rice and stir to coat in the garlic oil.
- Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer for 15 minutes or until rice is tender.
- Stir in heavy cream and parmesan cheese until well combined. Return chicken to the skillet and heat through.
- Garnish with fresh parsley before serving.
