- 8 small corn tortillas
- 1 cup diced tomatoes
- 1 cup shredded lettuce
- 1/2 cup shredded cheese
- 1/4 cup sour cream
Instructions
- Heat olive oil in a skillet over medium heat.
- Add shredded chicken, chili powder, cumin, garlic powder, onion powder, and salt. Stir to combine.
- Cook for 5-7 minutes until heated through.
- Warm the corn tortillas in a separate pan.
- Assemble tacos by adding chicken mixture to tortillas.
- Top with diced tomatoes, lettuce, cheese, and sour cream.
- Serve immediately.

- You can use leftover chicken for this recipe.
