- 4 bone-in, skin-on chicken thighs
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- Fresh parsley, chopped for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Season the chicken thighs with salt and pepper on both sides.
- In a large oven-safe skillet, heat olive oil over medium-high heat. Add the chicken thighs, skin side down, and cook for about 5-7 minutes until the skin is crispy and golden brown.
- Flip the chicken thighs over and add butter, garlic, thyme, and rosemary to the skillet. Cook for another 2 minutes, stirring to coat the chicken in the garlic butter.
- Pour in the chicken broth and heavy cream. Bring to a simmer.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (75°C).
- Remove from the oven and garnish with fresh parsley before serving.
Notes
- Feel free to add vegetables like broccoli or asparagus to the skillet for a complete meal.
- You can substitute chicken thighs with chicken breasts if preferred, but adjust cooking time as needed.
