Description
A simple and flavorful dish made with chicken thighs cooked in a crockpot.
Ingredients

- 4 chicken thighs
- 1 cup chicken broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup carrots, sliced
- 1 cup potatoes, diced
Instructions
- Heat olive oil in a skillet over medium heat.
- Brown the chicken thighs on both sides.
- Place chopped onions and minced garlic in the crockpot.
- Add browned chicken thighs on top of the onions and garlic.
- Pour in chicken broth.
- Sprinkle paprika, salt, and pepper over the chicken.
- Add sliced carrots and diced potatoes.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Serve hot.
Notes
- For extra flavor, marinate chicken thighs overnight.
- Feel free to add other vegetables.
- Leftovers can be stored in the refrigerator for up to 3 days.
