Description

Ingredients

  • 4 chicken thighs
  • 1 cup chicken broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup carrots, sliced
  • 1 cup potatoes, diced

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Brown the chicken thighs on both sides.
  3. Place chopped onions and minced garlic in the crockpot.
  4. Add browned chicken thighs on top of the onions and garlic.
  5. Pour in chicken broth.
  6. Sprinkle paprika, salt, and pepper over the chicken.
  7. Add sliced carrots and diced potatoes.
  8. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  9. Serve hot.

Notes

  • For extra flavor, marinate chicken thighs overnight.
  • Feel free to add other vegetables.
  • Leftovers can be stored in the refrigerator for up to 3 days.
