Ingredients

  • 1 lb (450g) chicken breast, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 teaspoons garam masala
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 4 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 can (14 oz) diced tomatoes
  • 1 cup coconut milk
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, combine yogurt, lemon juice, garam masala, cumin, coriander, turmeric, paprika, and salt. Add chicken pieces and mix to coat. Marinate for at least 1 hour or overnight in the refrigerator.
  2. Heat 2 tablespoons of vegetable oil in a large skillet over medium heat. Add the marinated chicken pieces and cook until browned on all sides. Remove from the skillet and set aside.
  3. In the same skillet, add the remaining 2 tablespoons of oil and sauté the chopped onion until translucent.
  4. Add minced garlic and grated ginger, cooking for another minute until fragrant.
  5. Stir in the diced tomatoes and cook for about 5 minutes, allowing the mixture to thicken.
  6. Add the browned chicken back to the skillet, along with coconut milk. Stir to combine and let simmer for 15-20 minutes until the chicken is cooked through and the sauce is thickened.
  7. Garnish with fresh cilantro before serving.

Notes

  • Serve with basmati rice or naan for a complete meal.
  • Adjust the spice level by adding more or less paprika and garam masala.
