A flavorful and aromatic chicken tikka masala made without alcohol, perfect for a comforting meal.

- 1 lb (450g) chicken breast, cut into bite-sized pieces
- 1 cup plain yogurt
- 2 tablespoons lemon juice
- 2 teaspoons garam masala
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 1 teaspoon salt
- 4 tablespoons vegetable oil
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 can (14 oz) diced tomatoes
- 1 cup coconut milk
- Fresh cilantro for garnish
Instructions
- In a bowl, combine yogurt, lemon juice, garam masala, cumin, coriander, turmeric, paprika, and salt. Add chicken pieces and mix to coat. Marinate for at least 1 hour or overnight in the refrigerator.
- Heat 2 tablespoons of vegetable oil in a large skillet over medium heat. Add the marinated chicken pieces and cook until browned on all sides. Remove from the skillet and set aside.
- In the same skillet, add the remaining 2 tablespoons of oil and sauté the chopped onion until translucent.
- Add minced garlic and grated ginger, cooking for another minute until fragrant.
- Stir in the diced tomatoes and cook for about 5 minutes, allowing the mixture to thicken.
- Add the browned chicken back to the skillet, along with coconut milk. Stir to combine and let simmer for 15-20 minutes until the chicken is cooked through and the sauce is thickened.
- Garnish with fresh cilantro before serving.
Notes
- Serve with basmati rice or naan for a complete meal.
- Adjust the spice level by adding more or less paprika and garam masala.
