- 2 cups cooked shredded chicken
- 4 cups chicken broth
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 cup corn kernels
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
- tortilla strips for serving
Instructions
- In a large pot, sauté the onion and garlic until soft.
- Add the chicken, broth, black beans, tomatoes, corn, chili powder, cumin, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Serve hot, garnished with cilantro and tortilla strips.
Notes
- Customize with avocado or lime if desired.
- Can use rotisserie chicken for convenience.
