Ingredients

  • 2 cups cooked chicken, shredded
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 2 corn tortillas, cut into strips
  • 2 tbsp olive oil
  • Fresh cilantro for garnish
  • 1 avocado, sliced
  • 1 lime, cut into wedges

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and bell pepper. Cook until softened.
  3. Stir in diced tomatoes, chicken broth, cumin, and chili powder.
  4. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Add shredded chicken and cook for another 5 minutes.
  6. While the soup simmers, fry tortilla strips in oil until crispy.
  7. Serve soup hot, garnished with tortilla strips, avocado, cilantro, and lime wedges.
