Description
A hearty and comforting chicken wild rice soup.
Ingredients

- 1 cup wild rice
- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 6 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 cup heavy cream
- Salt to taste
- Pepper to taste
- 2 tablespoons fresh parsley, chopped
Instructions
- Rinse the wild rice and set aside.
- In a large pot, heat olive oil over medium heat.
- Add onion, carrots, and celery. Cook until softened.
- Stir in garlic and cook for 1 minute.
- Add chicken broth and wild rice. Bring to a boil.
- Reduce heat and simmer for 45 minutes, or until rice is tender.
- Add cooked chicken and heavy cream. Stir and heat through.
- Season with salt and pepper. Garnish with parsley before serving.
Notes
- This soup can be made ahead and stored in the refrigerator.
- Reheat gently on the stove for best results.
- Feel free to add more vegetables if desired.
