A hearty and comforting chicken wild rice soup.


Ingredients

  • 1 cup wild rice
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 cup heavy cream
  • Salt to taste
  • Pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Rinse the wild rice and set aside.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onion, carrots, and celery. Cook until softened.
  4. Stir in garlic and cook for 1 minute.
  5. Add chicken broth and wild rice. Bring to a boil.
  6. Reduce heat and simmer for 45 minutes, or until rice is tender.
  7. Add cooked chicken and heavy cream. Stir and heat through.
  8. Season with salt and pepper. Garnish with parsley before serving.

Notes

  • This soup can be made ahead and stored in the refrigerator.
  • Reheat gently on the stove for best results.
  • Feel free to add more vegetables if desired.
