Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 medium sweet potatoes, peeled and cubed
  • 1 ripe avocado
  • 1/4 cup Greek yogurt
  • 1 tbsp lime juice
  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped fresh cilantro

Instructions

  1. Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, paprika, salt, and pepper. Spread on a baking sheet and roast for 25 minutes.
  2. Season chicken breasts with salt and pepper. Heat a skillet over medium heat and cook chicken for 6-7 minutes per side until fully cooked.
  3. In a blender, combine avocado, Greek yogurt, lime juice, garlic, and cilantro. Blend until smooth.
  4. Slice the cooked chicken and serve with roasted sweet potatoes. Drizzle with avocado sauce.

Notes

  • For extra flavor, add a pinch of cumin to the sweet potatoes.
  • If the sauce is too thick, add a splash of water.
