- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1/4 cup peanut butter
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp lime juice
- 1 clove garlic, minced
- 1/4 tsp red pepper flakes
- 4 large tortillas
- 1 cup shredded lettuce
- 1/2 cup shredded carrots
- 1/4 cup chopped cilantro
Instructions
- Heat olive oil in a pan over medium heat. Cook chicken for 6-7 minutes per side until fully cooked. Let rest, then slice into strips.
- In a bowl, whisk peanut butter, soy sauce, honey, lime juice, garlic, and red pepper flakes to make the sauce.
- Warm tortillas for 30 seconds in a dry pan or microwave.
- Spread peanut sauce on tortillas, then add chicken, lettuce, carrots, and cilantro.
- Roll tightly, tucking in the sides, and slice in half. Serve immediately.
Notes
- Add sriracha for extra heat.
- Use whole wheat tortillas for a healthier option.
- Store leftovers in the fridge for up to 2 days.
