Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1/4 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 1 clove garlic, minced
  • 1/4 tsp red pepper flakes
  • 4 large tortillas
  • 1 cup shredded lettuce
  • 1/2 cup shredded carrots
  • 1/4 cup chopped cilantro

Instructions

  1. Heat olive oil in a pan over medium heat. Cook chicken for 6-7 minutes per side until fully cooked. Let rest, then slice into strips.
  2. In a bowl, whisk peanut butter, soy sauce, honey, lime juice, garlic, and red pepper flakes to make the sauce.
  3. Warm tortillas for 30 seconds in a dry pan or microwave.
  4. Spread peanut sauce on tortillas, then add chicken, lettuce, carrots, and cilantro.
  5. Roll tightly, tucking in the sides, and slice in half. Serve immediately.

Notes

  • Add sriracha for extra heat.
  • Use whole wheat tortillas for a healthier option.
