Delicious and healthy chicken zucchini boats filled with seasoned chicken, cheese, and topped with fresh herbs.


Ingredients

  • 2 medium zucchinis
  • 1 lb (450g) ground chicken
  • 1 cup (100g) shredded mozzarella cheese
  • 1/2 cup (75g) diced tomatoes
  • 1/4 cup (60g) chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the center using a spoon to create boat shapes.
  3. In a skillet, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
  4. Add ground chicken to the skillet, season with Italian seasoning, salt, and pepper. Cook until browned.
  5. Stir in diced tomatoes and half of the mozzarella cheese. Remove from heat.
  6. Fill each zucchini boat with the chicken mixture and place in a baking dish.
  7. Top with the remaining mozzarella cheese.
  8. Bake in the preheated oven for 20 minutes or until the cheese is bubbly and golden.
  9. Garnish with fresh parsley before serving.

Notes

  • Feel free to add more vegetables to the chicken mixture for added flavor and nutrition.
  • You can substitute ground chicken with ground turkey or beef if preferred.
