Delicious and healthy chicken zucchini boats filled with seasoned chicken, cheese, and topped with fresh herbs.
Ingredients

- 2 medium zucchinis
- 1 lb (450g) ground chicken
- 1 cup (100g) shredded mozzarella cheese
- 1/2 cup (75g) diced tomatoes
- 1/4 cup (60g) chopped onion
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the center using a spoon to create boat shapes.
- In a skillet, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
- Add ground chicken to the skillet, season with Italian seasoning, salt, and pepper. Cook until browned.
- Stir in diced tomatoes and half of the mozzarella cheese. Remove from heat.
- Fill each zucchini boat with the chicken mixture and place in a baking dish.
- Top with the remaining mozzarella cheese.
- Bake in the preheated oven for 20 minutes or until the cheese is bubbly and golden.
- Garnish with fresh parsley before serving.
Notes
- Feel free to add more vegetables to the chicken mixture for added flavor and nutrition.
- You can substitute ground chicken with ground turkey or beef if preferred.
