Ingredients

  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp instant coffee powder

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. Whisk flour, cocoa powder, baking powder, baking soda, and salt in a bowl.
  3. In another bowl, mix coffee and milk.
  4. Cream butter and sugar until light and fluffy. Beat in egg and vanilla.
  5. Alternately add dry ingredients and coffee mixture to the butter mixture, mixing until just combined.
  6. Divide batter evenly into cupcake liners. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Cool cupcakes completely.
  8. Whip heavy cream, powdered sugar, and instant coffee until stiff peaks form.
  9. Pipe or spread the cream on top of the cooled cupcakes.
  10. Serve and enjoy.
