Ingredients

  • 1/2 cup unsalted butter, melted

  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon vegetable oil

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs with melted butter. Press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth.
  4. Add vanilla extract and eggs, mixing well after each addition.
  5. Stir in sour cream until fully incorporated.
  6. Pour the cheesecake mixture over the crust in the springform pan.
  7. Bake for 50-60 minutes until the center is set.
  8. Let it cool at room temperature, then refrigerate for 4 hours or overnight.
  9. In a microwave, melt chocolate chips with vegetable oil until smooth.
  10. Dip sliced strawberries into the chocolate and place on top of the chilled cheesecake before serving.
