- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1 cup fresh strawberries, hulled and sliced
- 1 cup semi-sweet chocolate chips
- 1 tablespoon vegetable oil
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs with melted butter. Press into the bottom of a springform pan.
- In a large bowl, beat cream cheese and sugar until smooth.
- Add vanilla extract and eggs, mixing well after each addition.
- Stir in sour cream until fully incorporated.
- Pour the cheesecake mixture over the crust in the springform pan.
- Bake for 50-60 minutes until the center is set.
- Let it cool at room temperature, then refrigerate for 4 hours or overnight.
- In a microwave, melt chocolate chips with vegetable oil until smooth.
- Dip sliced strawberries into the chocolate and place on top of the chilled cheesecake before serving.
