Ingredients

  • 1 whole chicken (about 45 lbs)
  • 2 tbsp olive oil
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 lemon, halved
  • 4 cloves garlic, crushed
  • 1 onion, quartered

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the chicken dry with paper towels.
  3. Rub the chicken with olive oil.
  4. Mix salt, pepper, garlic powder, paprika, thyme, and rosemary in a small bowl.
  5. Season the chicken evenly with the spice mix, including inside the cavity.
  6. Stuff the cavity with lemon halves, garlic cloves, and onion.
  7. Place the chicken in a roasting pan, breast-side up.
  8. Roast for 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C).
  9. Let it rest for 10 minutes before carving.
