- 4 cod fillets (6 oz each)
- 1 can (14 oz) coconut milk
- 2 tbsp red curry paste
- 1 tbsp lime juice
- 1 tsp ginger, grated
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, whisk coconut milk, curry paste, lime juice, ginger, garlic, salt, and pepper.
- Place cod fillets in a baking dish and pour the sauce over them.
- Bake for 15-20 minutes until fish flakes easily.
- Garnish with cilantro before serving.
Notes
- For extra heat, add chopped chili peppers.
- Serve with steamed rice or roasted vegetables.
