Ingredients

  • 2 cups green beans, trimmed
  • 1 cup cranberry sauce
  • 4 medium potatoes, peeled and cubed
  • 1/2 cup butter
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 tablespoon olive oil
  • 1 cup chopped pecans
  • 1 tablespoon fresh rosemary, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Boil potatoes in salted water until tender, about 15 minutes.
  3. Drain potatoes and mash with butter, cream, salt, and pepper.
  4. In a pan, sauté green beans in olive oil until tender-crisp.
  5. Add cranberry sauce and mix well.
  6. Spread the mashed potatoes in a baking dish.
  7. Top with sautéed green beans and sprinkle with pecans and rosemary.
  8. Bake for 20 minutes or until heated through.
  9. Serve warm.
