Ingredients

- 2 cups of Brussels sprouts
- 1 cup of cranberries
- 4 medium potatoes
- 1 cup of green beans
- 1/2 cup of pecans
- 3 tablespoons of olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Trim and halve the Brussels sprouts.
- Wash and trim the green beans.
- Peel and chop the potatoes into cubes.
- Toss Brussels sprouts, green beans, and potatoes with olive oil, salt, and pepper.
- Spread the mixture on a baking sheet.
- Roast in the oven for 25-30 minutes.
- In the last 5 minutes, add cranberries and pecans.
- Remove from oven and serve warm.
Notes
- Feel free to add your favorite herbs.
- This dish can be made ahead and reheated.
