A hearty chuck roast cooked in a Dutch oven for tender and flavorful results.
Ingredients

- 3–4 pounds chuck roast
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 4 carrots, chopped
- 4 potatoes, diced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Preheat your oven to 325°F (160°C).
- Heat olive oil in a Dutch oven over medium-high heat.
- Season the chuck roast with salt and pepper.
- Brown the roast on all sides in the Dutch oven.
- Remove the roast and set aside.
- Add onions and garlic, sauté until softened.
- Add carrots and potatoes, stir to combine.
- Return the roast to the pot.
- Pour in beef broth and Worcestershire sauce.
- Add thyme.
- Cover and transfer to the oven.
- Cook for 3-4 hours until the meat is tender.
Notes
- Let the roast rest before slicing.
- Use leftovers for sandwiches or soups.
