Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 carrots, chopped
  • 4 potatoes, diced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Heat olive oil in a Dutch oven over medium-high heat.
  3. Season the chuck roast with salt and pepper.
  4. Brown the roast on all sides in the Dutch oven.
  5. Remove the roast and set aside.
  6. Add onions and garlic, sauté until softened.
  7. Add carrots and potatoes, stir to combine.
  8. Return the roast to the pot.
  9. Pour in beef broth and Worcestershire sauce.
  10. Add thyme.
  11. Cover and transfer to the oven.
  12. Cook for 3-4 hours until the meat is tender.
