  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 8 oz cream cheese, softened
  • 1/3 cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)
  • 1/4 cup granulated sugar (for coating)
  • 2 teaspoons ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together the flour, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until fully incorporated.
  6. In a separate bowl, beat the cream cheese with the powdered sugar and vanilla extract until smooth and creamy.
  7. Using a cookie scoop, take a portion of the cookie dough, flatten it in your palm, place a teaspoon of the cream cheese filling in the center, and wrap the dough around the filling to form a ball.
  8. Roll each cookie ball in a mixture of granulated sugar and ground cinnamon.
  9. Place the coated cookie balls on the prepared baking sheet, spacing them about 2 inches apart.
  10. Bake in the preheated oven for 10-12 minutes until the edges are lightly golden.
  11. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes
