Description
These Churro Cookies are soft, chewy, and coated in cinnamon sugar, just like your favorite Crumbl cookies! Perfect for satisfying your sweet tooth.

- 2 1/2 cups All-purpose flour
- 1 teaspoon Baking soda
- 1 teaspoon Baking powder
- 1/2 teaspoon Salt
- 1 cup Unsalted butter, softened
- 1 cup Granulated sugar
- 1/2 cup Brown sugar, packed
- 1 large Egg
- 2 teaspoons Vanilla extract
- 2 teaspoons Cinnamon
- 1/2 cup Granulated sugar (for coating)
- 1 tablespoon Cinnamon (for coating)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract to the butter mixture and mix until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- In a small bowl, mix together the granulated sugar and cinnamon for coating.
- Scoop out dough and roll it into balls, then roll each ball in the cinnamon sugar mixture.
- Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden. The centers may look underbaked, but they will continue to cook as they cool.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For extra cinnamon flavor, you can add more cinnamon to the dough.
- These cookies are best enjoyed fresh but can be stored in an airtight container for up to a week.
