These easy homemade churro cookies are soft, chewy, and rolled in cinnamon sugar for that classic churro flavor.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 tablespoon ground cinnamon
- 1/2 cup granulated sugar (for rolling)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and 1 cup of granulated sugar until light and fluffy.
- Add the eggs and vanilla extract, and mix until well combined.
- In a separate bowl, whisk together the flour, baking powder, salt, and ground cinnamon.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Scoop tablespoon-sized portions of dough and roll them into balls.
- In a small bowl, mix together the remaining 1/2 cup of granulated sugar and 1 tablespoon of cinnamon.
- Roll each ball of dough in the cinnamon sugar mixture until fully coated.
- Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes or until the edges are lightly golden. The centers will look soft but will set as they cool.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For extra flavor, you can add a pinch of nutmeg to the cinnamon sugar mixture.
- These cookies are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
