- 2 pounds boneless, skinless chicken breasts
- 1 packet taco seasoning
- 1 cup salsa
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 bell pepper, diced
- 1 onion, diced
- 1 cup shredded cheese (cheddar or Mexican blend)
- Fresh cilantro, for garnish
- Tortillas, for serving
Instructions
- Place the chicken breasts in the crockpot.
- Sprinkle the taco seasoning over the chicken.
- Add the salsa, black beans, corn, bell pepper, and onion to the crockpot.
- Stir to combine all the ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through.
- Once done, shred the chicken with two forks and stir to combine with the other ingredients.
- Sprinkle with shredded cheese and cover for an additional 5-10 minutes until the cheese is melted.
- Serve in tortillas and garnish with fresh cilantro.
Notes
