  • 2 pounds boneless, skinless chicken breasts
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 bell pepper, diced
  • 1 onion, diced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Fresh cilantro, for garnish
  • Tortillas, for serving

Instructions

  1. Place the chicken breasts in the crockpot.
  2. Sprinkle the taco seasoning over the chicken.
  3. Add the salsa, black beans, corn, bell pepper, and onion to the crockpot.
  4. Stir to combine all the ingredients.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through.
  6. Once done, shred the chicken with two forks and stir to combine with the other ingredients.
  7. Sprinkle with shredded cheese and cover for an additional 5-10 minutes until the cheese is melted.
  8. Serve in tortillas and garnish with fresh cilantro.

Notes

  • For a spicier dish, add diced jalapeños or a dash of hot sauce.
