- 2 ripe avocados, mashed
- 1 lime, juiced
- 1 small onion, finely chopped
- 1 tomato, diced
- 1 jalapeño, seeded and minced
- 1/4 cup cilantro, chopped
- Salt and pepper to taste
- 12 taco shells
- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup lettuce, shredded
- 1 cup salsa
- 1 cup sour cream
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- Tortilla chips for serving
Instructions
- In a medium bowl, combine mashed avocados, lime juice, onion, tomato, jalapeño, cilantro, salt, and pepper to make the guacamole. Set aside.
- In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat and stir in taco seasoning according to package instructions. Set aside.
- Preheat the oven to 350°F (175°C). Arrange taco shells on a baking sheet and fill each shell with seasoned meat, then top with cheese.
- Bake in the oven for about 10 minutes or until cheese is melted and bubbly.
- While the tacos are baking, prepare the platter by arranging the tortilla chips, black beans, corn, shredded lettuce, salsa, and sour cream.
- Once the tacos are done, place them on the platter and add a bowl of guacamole in the center. Serve immediately.
