Description
These easy homemade cinnamon churro cookies are soft on the inside and have a crispy, cinnamon-sugar coating on the outside. Perfect for satisfying your sweet tooth!

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup granulated sugar (for coating)
- 1 tablespoon ground cinnamon (for coating)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and 1 cup of sugar until light and fluffy.
- Add the eggs and vanilla extract, mixing until fully combined.
- In another bowl, whisk together the flour, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Scoop dough using a tablespoon and roll into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- While the cookies are baking, mix together 1/2 cup of sugar and 1 tablespoon of cinnamon in a shallow bowl.
- Once the cookies are done, remove them from the oven and let them cool for a few minutes before rolling them in the cinnamon-sugar mixture.
- Allow to cool completely on a wire rack before serving.
Notes
- For a more intense cinnamon flavor, you can increase the amount of ground cinnamon in the dough.
- These cookies can be stored in an airtight container at room temperature for up to a week.
